Almazara Andres Aguilar was founded in 2009 as a modern, pristine milling operation, crushing the best green olive fruit available. The mill is private, owned by the Aguilar family of Linares, Jaén. The mill prides itself on innovation, transparency and sourcing the highest-quality early harvest green olive fruit from their own farms and partner farms throughout Andalusia. They are proud to crush green fruit under optimal conditions, keeping fruit paste temperatures as low as possible. Each cultivar harvested is processed with the state-of-the-art milling equipment and filtered immediately after crushing.
This oil has what is expected in a green Picual, which is the herbaceous spiciness along with a long list of green leafy undertones of artichoke, green apple, green banana, green tea, mint, nettle, and tomato leaf. It ends with a bit of woodiness and black pepper finish. It is complex with some light, but surprisingly ripe tropical fruit flavors along with some nuttiness and bitterness, which gives it a rounded mouth feel. It is a medium-robust oil that is nicely balanced with intensive fruitiness, medium bitterness, and medium pungency.
